Have you ever defrosted a pack of Weathervane Scallops and been pleasantly overwhelmed by the sheer abundance of them? It’s a full-on feast, needing little more than the perfect sear and simple seasonings that complement the natural sweetness and succulence of these wild-harvested beauties. They’re delicious hot off the skillet, but also great the next day or two on a salad or bed of cold noodles (I’m thinking of trying that with this recipe for Soba Sesame Noodles).
But perhaps you prefer to stretch a pack of scallops beyond the next few days of good eating. For those times when you’re planning to dine alone, or only want to defrost enough for an afternoon snack, consider partially thawing your pack of scallops — and refreezing the rest. A partially defrosted pack of Weathervane Scallops can be broken up into whatever portion you’re in the mood for now, and the refrozen scallops will hold up well for up to a month in the freezer.
Generally, I’d never advise you to thaw and refreeze raw seafood, since this process can degrade its taste and texture — especially if you’re using your own freezer, rather than a commercial-grade equipment. However, scallops generally freeze, and refreeze, quite well compared to other varieties of seafood. This is due, in part, to how promptly they’re processed and flash-frozen right on the fishing vessel into 20 oz. plates, within just a few hours of harvest (unlike larger species, which can’t always be processed on the same vessel that harvested them).
As an aside, how any seafood is frozen — including how many times it has been thawed and refrozen before it gets to you — is often what sets apart the high-quality seafood from stuff that’s just meh. Many of our offerings are never thawed before they make it to your freezer, while a few of them (such as Ground Sockeye Salmon) are briefly thawed for processing before being portioned and flash-frozen.
